Chicken & Asparagus with Pasta
Fresh asparagus and tender chicken star in this easy yet elegant pasta dish you can put together quickly.
INGREDIENTS
1# boneless chicken breast cut into 1” pieces
1# fresh asparagus cut into 1/2 inch slices
4 ripe Roma tomatoes (chopped)
4 clove garlic (minced)
1/2 cup white wine
1/4 cup corn oil
1/2 pint heavy cream 1 tsp salt
1/2 cup Parmesan cheese, grated
1-12 oz pkg al dente spinach fettuccini noodles
DIRECTIONS
- Saute chicken & garlic in oil for approx 4 minutes
- Remove chicken from skillet; add wine & cook for 2 minutes
- Add cream & reduce until large bubbles appear
- Add chicken, tomatoes, salt & pepper and cook for 2 minutes
- Cook pasta & asparagus together for 3 minutes & drain
- Toss chicken mixture, pasta & asparagus together and top with Parmesan cheese
